Fiddlehead Ferns


Along with the morel, another sign that spring is upon us is that the fiddlehead fern starts to show up in the specialty food markets.


Named for their resemblance to the tops of violins/fiddles, the fiddlehead fern is a delicacy from northern New England...often considered the first green vegetable of spring.

The flavor is somewhat reminiscent of a asparagus with an earthy and slightly bitter finish. If you want to add some depth to your cooking or just try something new this spring, this is the time of year to grab these.

Here's an interesting recipe from Melissa Perello, (Executive Chef of Fifth Floor restaurant in SF) that combines both the fiddlehead fern and the morel.
